Pineapple-Mango Salsa

Serves 6-8 People As Appetizer


In mid-April, Costa Rica is nearing the end of the dry season. The rainy season is about to commence. It is at this time that so many fruits, such as pineapple and mangos, are extremely plentiful. You can buy fruits for very minimal prices. To take advantage of the food prices, one of my go-to snacks is pineapple-mango salsa. This is great paired with chips, however, I also love to use it with fish tacos or drizzled over baked white fish! Yum!



Ingredients:

2 cups of pineapple finely diced

1 mango finely diced

1/4 cup of fresh cilantro diced

1/2 red onion diced

1 cup of tomatoes diced

1 jalapeno diced

1 large or 2 small limes

1 tsp of salt


Instructions:

1. Dice pineapple, mango, cilantro, onion, tomatoes, and jalapeno into fine pieces and place into a bowl.

2. Squeeze juice from your lime or limes over the diced foods.

3. Add 1 tsp of salt to the bowl.

4. Stir the mixture until all foods are evenly distributed.

5. Enjoy!

When shopping for produce in Costa Rica, you will always find the best prices when going to the farmer's market (feria). It is best for your pocketbook to find out when your local farmer's market takes place and make sure to put it in your schedule every week. I head to the San Ramon farmer's market which is open on Fridays from 7 am - 6 pm and Saturdays from 7 am - 12 pm. You can easily find products at the grocery stores in town, but just for an elevated price. By going to the farmer's market you remove the middle man.


The finer you chop your vegetables the more flavors that will end up intertwined on your chip. The more flavors on your chip mean a larger fiesta in your mouth. I recommend sharpening your knives and taking out your best cutlery when making this salsa, as it extremely aids you in fine-tuning your chopping and dicing skills.


When consuming or buying tortilla chips, I like to look for chips that are made of corn tortillas because they are gluten-free. In addition, it is best to consume tortilla chips made with healthy oil. This may include olive oil, sunflower oil, coconut oil, or avocado oil. The following are brands that I would recommend: Perfection Snacks, Late July Snacks, Sabor Mexicano Homemade Chips, and Mi Nina.
