Makes 8 - 12 Tuna/Salmon Patties
Fish patties are a meal that I often make when I need to go grocery shopping, but just haven't found the time. All the ingredients are easily found in my house at all times. Two of the main ingredients are tuna/salmon or garbanzo beans which I always have in cans. All other ingredients are basic staples that you would find in any Costa Rican household. Not only is this recipe easy to make with ingredients that you already have in your cupboard, but it also packs a protein punch. Protein is good for your body for a variety of reasons including: maintaining bone health, metabolism boosting, lowering blood pressure, increasing muscle mass/strength, and reducing your appetite. I hope you enjoy this protein packed favorite.
Ingredients:
2 20-ounce cans of garbanzo beans
3 4-ounce cans of tuna or salmon
5 Flaxseed Eggs
3 Large Limes
1 Jalapeño
5 Garlic Cloves
1 Large Finely Chopped Onion
1 tsp Salt
Olive Oil
***Omit jalapeño if you do wish your dish to have a slight kick.
Instructions:
1. Open can of garbanzo beans and drain. Use a blender or food processor to mash the beans into a paste consistency.
2. Open the can of tuna or salmon and drain.
3. Place fish and garbanzo beans in a large bowl.
4. Prepare 5 flaxseed eggs in a separate bowl and let it sit for 5 minutes or more. (One flaxseed egg is equal to 1 Tablespoon of flaxseed and 3 Tablespoons of water.)
5. Chop up the jalapeño, onion and garlic into fine pieces. Add your ingredients to the bowl with the garbanzo beans and fish of your choice.
6. Add the salt to the bowl.
7. Squeeze 3 limes into the large bowl.
8.. Place Flaxseed eggs into the large bowl.
9. Mix all the ingredients in the bowl with your hand.
10. Create a large ball using 3/4 cup of ingredients. Pat to flatten ball into a cake. Complete this step until your mixture no longer remains.
11. Place olive oil into the pan and fry fish cake patties for 3-5 minutes on both sides.
12. Remove from the pan and enjoy with spicy mayo and a side salad.
Additional Information -
I often serve my fish patties with a side salad and spicy/chipotle mayo. Some brands that sell vegan mayo (void of diary, gluten and egg) are Nature's Greatest Foods, Flying Goose, Sir Kensington's, Wicked Kitchen, O'dang Mayo, and Urban Platter. These are just a few companies to name a few. These companies can all be found on Amazon so products are easily deliverable to your own home.
Flax-seed eggs are a great replacement for real eggs from a chicken. For every flaxen egg you need in a recipe, mix 1 Tablespoon of flaxseed with 3 Tablespoons of water. You then let it sit for 5 minutes or more until it has the consistency of a true egg. Flaxeggs do not contain cholesterol so this is great to use in all bakery items (bread, pancakes, muffins, etc) if you need to lower your cholesterol. Flaxseed is full of fiber, protein, and Omega 3s which are all great for your body.
To give your fish patties a little Tex-Mex flair add 1/2 cup of black beans and 1/2 cup of corn to the recipe. Just stir them into the mixture right before you complete step 9. When making the Tex Mex version, serve your fish patties with corn tortillas or corn bread. Adding a hint of cumin will give it more of Tex-Mex flavor as well.
